Pão de Queijo (Brazilian Cheese Bread)

Ingredients:

  • 1 cup tapioca flour (polvilho doce)
  • 1/2 cup of grated carrots
  • 1 cup shredded cheese (mild mozzarella, cheddar, or a mix)
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 2–3 tablespoons milk (add slowly, just enough to form a soft dough)
  • Pinch of salt (optional)

Instructions:

  1. Make the Dough:
  • In a mixing bowl, combine the tapioca flour and cheese.
  • Add the melted butter and egg. Mix with a spoon or your hands.
  • Slowly add milk, a little at a time, until the dough becomes soft but not sticky. It should be easy to roll into balls.
  1. Shape:
  • Roll the dough into small balls (about 1 tablespoon each).
  • Place them on a lined baking sheet, spaced slightly apart.
  1. Bake:
  • Preheat your oven to 350°F (175°C).
  • Bake for 15–18 minutes, or until lightly golden and puffed.

Freezing Instructions:

  • Let the pão de queijo cool completely.
  • Freeze on a tray, then transfer to a sealed bag.
  • To reheat, bake at 350°F for 5–8 minutes straight from the freezer.
