Perfect for a Family of 4
Ingredients:
- 1 cup tapioca flour (polvilho doce)
- 1/2 cup of grated carrots
- 1 cup shredded cheese (mild mozzarella, cheddar, or a mix)
- 2 tablespoons unsalted butter, melted
- 1 large egg
- 2–3 tablespoons milk (add slowly, just enough to form a soft dough)
- Pinch of salt (optional)
Instructions:
- Make the Dough:
- In a mixing bowl, combine the tapioca flour and cheese.
- Add the melted butter and egg. Mix with a spoon or your hands.
- Slowly add milk, a little at a time, until the dough becomes soft but not sticky. It should be easy to roll into balls.
- Shape:
- Roll the dough into small balls (about 1 tablespoon each).
- Place them on a lined baking sheet, spaced slightly apart.
- Bake:
- Preheat your oven to 350°F (175°C).
- Bake for 15–18 minutes, or until lightly golden and puffed.
Freezing Instructions:
- Let the pão de queijo cool completely.
- Freeze on a tray, then transfer to a sealed bag.
- To reheat, bake at 350°F for 5–8 minutes straight from the freezer.
